Founded in 1974 as a small food establishment, Azteca Mexican Restaurants has grown to a chain of more than 35 restaurants located in Washington, Oregon and Florida. It employs over 1,400 people and serves nearly 400,000 customers each month. The restaurants offer a selection of authentic Mexican-style dishes, including burritos, enchiladas and fajitas. Its menu also includes a variety of nonalcoholic beverages and colesterol-free entrees. The restaurants serve chicken taquitos, nachos, quesadillas, pizzas, tacos and flautas. Its steaks, shrimp, chicken and pork fajitas are served with saut ed onions, green peppers, rice, beans, tortillas and cheese. Azteca Mexican Restaurants, with a location in Bellevue, Wash., also provides gift cards, jackets, baseball caps and calendars.
